BIBB LETTUCE WITH ROQUEFORT VINAIGRETTE

Ingredients

Dressing
  • 3 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • Juice of ½ lemon
  • ½ cup olive oil
  • ¼ cup crumbled Roquefort cheese
  • 2 heads Bibb lettuce, washed and outer leaves removed
  • ½ cup walnuts, toasted

A classic blue cheese vinaigrette makes a simple salad into something spectacular.

Instructions

FIRST In a small bowl combine vinegar, mustard, and lemon juice; whisk in olive oil until well blended. Stir in cheese and season with salt and pepper.

NEXT Arrange lettuce leaves on platter, sprinkle with nuts, and drizzle with desired amount of dressing. Season with black pepper and serve.
