GOAT CHEESE ICING

  • YIELDS: enough icing for one 2 layer cake or 24 cupcakes

Ingredients

  • 8 ounces fresh goat cheese, at room temperature
  • 6 ounces Neufchatel cheese, room temperature
  • 1 cup powdered sugar
  • 2 teaspoon orange zest

Goat cheese gives the traditional cream cheese icing a tangy flavor and is perfect for red velvet or carrot cake. I also love it on my Hummingbird Cupcakes.

Instructions

FIRST Using a hand or upright mixer, whip cheese until fluffy. Slowly add powdered sugar until will combined. Beat in zest and spread over cake or cupcakes or just enjoy it with a spoon!
