This is one of the easiest soups you will ever make. Serve it with fresh bread and a nice salad and it makes an absolutely perfect winter, comfort meal.
FIRST In a large pot set over medium high heat, brown sausage, onions, and garlic using spoon to break sausage into small chunks, about 4 minutes. Add mushrooms and cook an additional 3 minutes until tender and sausage if fully cooked.
NEXT Drain fat from soup and stir in dried herbs, tomatoes, and stock. Cover with lid and simmer for 10 minutes. Add pasta and simmer until al dente, about 8 minutes.
LAST Just before serving add spinach and basil, and stir until wilted. Season to taste with salt and pepper. Ladle into bowls and top with grated Parmesan.
