This recipe was a huge hit at a recent cooking class. The ingredients are fresh, but can easily be made anytime of the year.
FIRST Cook pasta according to package directions until al dente. Drain and return to pan.
NEXT In a small bowl, combine oil, lemon juice, Parmesan, and mint; season with salt and pepper and set aside.
LAST Toss hot pasta with lemon dressing, goat cheese, and spinach leaves. Divide among 6 bowls and top with addition Parmesan if desired.
