This dessert came second nature to my mom. If we had friends over she would always whip up a batch of lemon squares. A very refreshing, classic dessert that everyone loves!
FIRST Preheat oven to 325°F. To prepare crust, combine flour, butter, and sugar in a medium bowl using a fork. Press into a greased, 9”x13” baking pan and bake for 25 minutes or until lightly brown.
NEXT Combine eggs and sugar in a medium bowl and beat with a mixer or hand blender until fluffy. Add lemon juice, flour, baking powder and salt and mix well. Spread filling over baked crust and bake for 25 minutes. Let cool; sift powder sugar over top to garnish. Cut into squares and serve.
