MAMA RA’S BAKED BEANS

  • YIELDS: 6-8 servings

Ingredients

  • 2 cloves garlic, minced
  • 1 medium sweet onion, chopped
  • 1 medium green bell pepper, chopped
  • 1 – 16 ounce can baked beans
  • 1 – 16 ounce can chickpeas, rinsed and drained
  • 1 – 15.5 ounce can kidney beans, rinsed and drained
  • 1 cup frozen baby lima beans
  • 1 tablespoon molasses
  • ¼ cup apple cider vinegar
  • ½ cup water
  • ½ cup brown sugar
  • 1 cup ketchup
  • 3 slices good quality bacon

My mom always served homemade baked beans with hamburgers and home cooked fries. She inherited the recipe from my great-grandmother. I’ve added a variety of beans for color and texture, but it is still the same delicious flavor.

Instructions

FIRST Preheat oven 350°F. Sauté garlic, onion, and pepper in one teaspoon olive oil over medium high heat for 5 minutes or until softened. Remove from heat and set aside.

NEXT Coat a 9”x13” baking dish with cooking spray. In the same dish, combine sautéed vegetables with beans, molasses, vinegar, water, sugar, and ketchup. Season with salt and pepper and lay bacon strips over top.

LAST Cover dish with tin foil and bake for 40 minutes. Remove foil and continue baking for an additional 25 minutes.
