Mashed potatoes are a favorite Southern comfort food. The goat cheese adds a modern twist to a traditional recipe and gives the potatoes an extra creamy texture.
FIRST In a large soup pot or dutch oven, cover potato cubes with cold water and move to stove-top over medium-high heat. Cook, with lid on, 30 minutes, or until fork tender.
NEXT Drain potatoes and return to pot. Add cheese, butter and milk. Mash until smooth, adding more milk if necessary to achieve desired texture.
LAST Stir in chives, season with salt and pepper and serve.
