I took the traditional Southern style tuna salad and gave it a little spin with some of my favorite ingredients. Serve with crackers and sliced tomatoes for a quick lunch.
FIRST In a medium mixing bowl combine tuna, mayo, lemon juice, olives, cheese and oregano. Season to taste with fresh cracked pepper.
LAST Peel and chop eggs, discarding one egg yolk if desired. Add egg and celery to salad and refrigerate until ready to serve.
