Greek Summer Gazpacho

MEDITERRANEAN TUNA SALAD

Ingredients

  • 3 – 6 ounce cans chunk tuna packed in water, drained
  • 3 tablespoons light or regular mayonnaise
  • Juice of 1/2 lemon
  • 3 tablespoon chopped Greek olives
  • 3 tablespoons crumbled feta cheese
  • 2 teaspoons chopped fresh oregano (1/2 teaspoon dried)
  • 2 boiled eggs
  • ¾ cup chopped celery

I took the traditional Southern style tuna salad and gave it a little spin with some of my favorite ingredients. Serve with crackers and sliced tomatoes for a quick lunch.

Instructions

FIRST In a medium mixing bowl combine tuna, mayo, lemon juice, olives, cheese and oregano. Season to taste with fresh cracked pepper.

LAST Peel and chop eggs, discarding one egg yolk if desired. Add egg and celery to salad and refrigerate until ready to serve.
