SIMPLE FUDGE CAKES

Ingredients

  • 4 ounces unsweetened chocolate, roughly chopped
  • 1 cup butter (2 sticks)
  • 2 cups sugar
  • 4 eggs
  • 1 cup flour
  • ½ teaspoon baking powder
  • 1 teaspoon vanilla
  • ¾ cup chopped pecans (optional)
  • powdered sugar for garnish

My mom always made a huge batch of these to give to friends at Christmas along with her famous toasted pecans. They are incredibly rich and delicious and a large glass of milk is a must when devouring these.

Instructions

FIRST Preheat oven to 325° and lightly grease a 9×12 pan.

NEXT Place chocolate and butter in a large heat-proof bowl; set over a sauce pan of simmering water. Stir occasionally, heating until smooth, about 5 minutes. In a large mixing bowl, combine sugar, eggs, flour, baking powder and vanilla. Slowly pour in chocolate mixture and stir in nuts, if desired.

LAST Transfer batter to greased dish; bake 30 minutes or until a small knife inserted into the center comes out with a few crumbs attached. Do not overcook Top with powdered sugar.
