SWEET POTATO AND SALMON SALAD

Ingredients

Salad
  • 3 medium sweet potatoes, sliced lengthwise
  • 1 cup cherry tomatoes
  • olive oil
  • ½ cup pine nuts, toasted
  • 4 cups fresh spinach
  • 1 avocado, sliced
  • 1 pound fresh salmon, roasted
Dressing
  • 3 tablespoons honey
  • 2 tablespoons red wine vinegar
  • 1 tablespoon olive oil

A hearty, main dish salad is full of color and is perfect for entertaining.

Instructions

FIRST Preheat oven to 400°F. Place potatoes on a baking sheet lined with parchment paper, toss with olive oil, salt, and pepper. Bake for 15 minutes. Add tomatoes (seasoned with salt and olive oil) to the baking sheet and return to oven for an additional 10 minutes or until potatoes are tender and tomatoes are plump and beginning to burst.

NEXT While potatoes are roasting combine dressing ingredients and set aside.

LAST Divide spinach and avocado among 4 plates, top with sweet potatoes, tomatoes, salmon, and pine nuts. Drizzle with dressing and serve.
