This refreshing salad can be served as a side dish or on top of grilled fish, chicken, or flank steak. Using a variety of different colored tomatoes makes a gorgeous dish.
FIRST Combine tomatoes, onion, and lime juice in a large bowl. Season generously with kosher salt and freshly ground black pepper.
LAST Allow to marinate for 1 ½ hours at room temperature. Toss with basil and mint and serve. Store leftovers in refrigerator.
