Our local farmer’s market is showing signs of fall. Winter squash and local apples are taking the place of summer’s tomatoes and fresh okra. I have to admit that I am quite excited about the change…I was getting a little tomatoed out! All the rain we have had here in the south has been a welcome for more comforting foods like Butternut Squash Soup, one of my fall favorites. I love the fact that this soup is so versatile and freezes beautifully. I served this version with a smoked cheddar crouton, but there are so many ways to serve this family favorite…
Fall and winter will bring a little heartier meals and the Apple Ginger Stuffed Pork Chops from my cookbook Gourmet Made Simple is a perfect recipe for this time of year. If I am a little short on time I will use the apple stuffing as a topping for sliced pork tenderloin and serve it with Butternut Squash Soup and a fall salad. Of course, when it comes to fall desserts the list is endless. I have so many new recipe ideas I can’t wait to try, but I always have to be careful having all those sweets around the house – that gets me and my husband in trouble!
