I took the past two weeks off from writing and cooking and we welcomed our little boy, Thomas Neely Knox, into the world on Oct. 12th. We are all doing well and Neely is such a joy. Now I am back on my feet and in the kitchen, testing and writing recipes. The week before I had Neely I spent a few days making soups to stock my freezer and believe me, I am so glad I did!
Soups are a wonderful comfort food and I am always inspired every time I walk into my favorite lunch spot in Atlanta, Souper Jenny. Located in the heart of Buckhead, Jenny offers a choice of six hot soups, fresh salads and gourmet sandwiches that change daily. The menu is so fresh, seasonal and best of all – healthy. Last year Jenny released a cookbook with recipes of her best selling hot and cold soups, delicious house dressing, and a few salads. Depending on my mood, I use her book for inspiration or prepare one of her recipes exactly as written. Jenny’s famous “My Dad’s Turkey Chili” is on her menu almost daily and is easily the most requested soup she serves.
The sandwiches are unique and all sound so delicious it is hard to choose. Egg salad wrap with roasted tomatoes and spinach, Grilled Portabello Mushrooms on Ciabatta with her amazing Quick Artichoke Spread, and Homemade Pita with avocado, Grafton cheddar, and tomato – these are just a few of her creative offerings.
