A simple appetizer that is surprisingly delicious – I constantly order these little bites at a local restaurant. They can be made with a variety of cheeses such as goat cheese, Parmesean, or Manchego.
FIRST Using a sharp knife, slice dates long-ways until your knife hits the pit. Remove pit and set aside.
NEXT Toss celery with vinegar and ½ tablespoon oil, season with salt and freshly cracked black pepper.
LAST Slide 1-2 slices of celery in the center of each date along with a small chunk of cheese. Arrange dates on a plate and drizzle with remaining olive oil to serve.
