CREAMY PARMESAN ARTICHOKE DIP

Ingredients

  • 2 – 14 ounce can artichoke hearts, drained and coarsely chopped
  • 6 ounces good quality Parmesan cheese, finely shredded (about 1 1/2 cups)
  • 1 cup light mayonaise
  • 1/2 cup bottled banana peppers, drained and coarsely chopped
  • 1 red or yellow bell pepper chopped
  • 3 cloves garlic minced
  • 1 1/2 teaspoons ground cumin
  • dash cayenne pepper
  • pita chips to serve

My mom has more delicious dip recipes in her recipe file than I can count. This hot artichoke dip received raved reviews at Thanksgiving.

Instructions

FIRST Preheat oven to 400°F. Combine dip ingredients and transfer to 1 1/2 quart baking dish. Bake for 25 minutes until bubbly and brown.

Serve with pita chips.
