PIMENTO CHEESE

Ingredients

  • 10 ounces good quality sharp cheddar cheese (I use Cracker Barrel)
  • 1 – 4 ounce jar pimentos, un-drained
  • ½ cup homemade or store bought southern mayonnaise
  • ½ teaspoon Worcestershire sauce
  • ½ teaspoon onion powder
  • Cayenne pepper to taste

No picnic is complete without good ole Southern “Pimenna Cheese”. Growing up my mom always had a batch in the frig for last minute snacking.

Instructions

FIRST Using a hand grater or food processor with cheese shredding attachment, shred cheese into a large bowl.

NEXT Add pimentos and juice, mayonnaise, onion powder, and Worcesterhire and combine well. Season to taste with salt, black pepper, and cayenne pepper.

LAST Refrigerate until ready to serve. Serve as a sandwich or with saltine crackers or celery sticks.
