ROASTED GREEN BEANS WITH TOMATOES AND THYME VINAIGRETTE

  • YIELDS: 6 servings

Ingredients

  • 1 pound green beans, trimmed
  • 1 pound yellow wax beans, trimmed
  • 2 tablespoons olive oil
  • 1 tablespoon sherry vinegar
  • 1 tablespoon chopped fresh thyme
  • 1 teaspoon salt
  • 2 cups pear or cherry tomatoes

During the summer months farmer’s markets are full of a variety of beans. I have found that roasting in the oven brings out the best flavor and is super easy to prepare.

Instructions

FIRST Preheat oven to 450°F. Toss beans with oil, vinegar, thyme, and salt. Spread evenly onto baking sheet and roast for 10 minutes, tossing occasionally.

LAST Add tomatoes and continue cooking an additional 5 minutes until beans are tender and beginning to brown. Season to taste with freshly cracked pepper and salt.
