Georgia peach season is in full swing having come a little early this year thanks to the early spring. Growing up in the heart of the peach belt, we literally had peach trees lining both sides of our driveway and another orchard right across the highway. During the summer months my mom managed to incorporate peaches into every meal just to use all of our supply.
Last year, I wrote several recipes for the Georgia Peach Council - what a fun job! I want to share with you some of my favorites and offer a few creative ideas on how to incorporate this precious fruit in easy, delicious summer meals.
I have always been a big fan of cooking fish in parchment paper – not only is it easy, but you can add other ingredients such as pasta or rice, fresh vegetables and herbs, and splash of white wine and you have a one dish meal. Fish in Parchment with Peaches, Soy, and Jasmine Rice is incredible and if you are looking for a dish you can make ahead of time – here is your answer. Just store the uncooked packets on a baking sheet in the frig and pop in the oven about 20 minutes before dinner. Halibut, grouper, flounder, salmon, or swordfish all work well in this dish.
