FIRST Cook pasta according to package directions until al dente. Drain and return to pan.
NEXT In a small bowl, combine oil, lemon juice, Parmesan, and mint; season with salt and pepper and set aside.
LAST Toss hot pasta with lemon dressing, goat cheese, and spinach leaves. Divide among 6 bowls and top with additional Parmesan if desired.
