MY DAD’S TURKEY CHILI

  • COOK TIME: 40 minutes
  • YIELDS: 8 servings

Ingredients

  • 2 tablespoons olive oil
  • 1 red onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 2 pounds lean ground turkey
  • 2 tablespoons dark chili powder
  • ½ cup dark brown sugar
  • 2 – 28 ounce cans chopped tomatoes
  • 1 – 15 ounce can white beans, drained and rinsed
  • 1 – 15 ounce can black beans, drained and rinsed
  • 1 – 15 ounce can dark red kidney beans, drained and rinsed
  • 1 – 15 ounce can chili beans, un-drained
  • hot sauce to taste

Souper Jenny’s is very popular lunch spot in the heart of Atlanta. Jenny’s Turkey Chili is one of her most requested soups. Make a big pot and freeze in individual bags and you will be thankful on a hectic day when there is no time to cook!

Instructions

FIRST In a large, heavy duty stock pot, heat oil. Saute onions and peppers for 5 minutes or until soft. Add ground turkey and stir until cooked thoroughly.


NEXT
Stir in chili powder, sugar, and tomatoes. Season with salt and pepper and simmer for 15 minutes. Add beans and continue cooking on low heat for an additional 15 minutes. Season with additional salt, freshly ground black pepper, and hot sauce to taste.

LAST Serve with favorite toppings such as sour cream cheddar cheese, and chopped green onions.
