Simple Fudge Cakes

My mom always made a huge batch of these to give to friends at Christmas along with her famous toasted pecans. They are incredibly rich and delicious and a large glass of milk is a must when devouring these.

Hummingbird Cupcakes

Hummingbird cake is a classic southern cake with traditional cream cheese icing. I have lightened the recipe up a bit and made cupcakes which are perfect for entertaining. The Goat Cheese Icing gives it an amazing flavor, but traditional cream cheese icing or orange glaze is also a nice choice.

Goat cheese gives the traditional cream cheese icing a tangy flavor and is perfect for red velvet or carrot cake. I also love it on my Hummingbird Cupcakes.
