Grilled Potato Salad with Basil Salsa Verde

Grilling the potatoes gives this salad a delicious smoky flavor and it can easily be served room temperature. If you don’t have time to grill the potatoes, simply boil them until tender and toss with salsa verde.

Grilled Southern Potato Salad

This classic Southern dish is even better with grilled potatoes. Take the extra five minutes to make your own mayonnaise and you will be glad you did. Mayonnaise can be stored in refrigerator for up to 5 days.

Summer Succotash

Originating with the Native American Indians, there are many variations of succotash. I love this dish because it is light and fresh and always reminds me of hot summer days. Serve it as a cold salad or room temperature with fresh fish or chicken.

Mashed Potatoes with Goat Cheese

Mashed potatoes are a favorite Southern comfort food. The goat cheese adds a modern twist to a traditional recipe and gives the potatoes an extra creamy texture.

Marinated Red Cabbage and Apple Slaw

Depending on what I am serving, I sometimes add crumbled blue cheese to this slaw. If you are making it ahead, add the apples at the last minute to prevent turning.

Mama Ra’s Baked Beans

My mom always served homemade baked beans with hamburgers and home cooked fries. She inherited the recipe from my great-grandmother. I’ve added a variety of beans for color and texture, but it is still the same delicious flavor.

Lime Cilantro Basmati Rice

Not exactly southern, but this is one of my favorite side dishes to serve with Mexican fare.
