Mashed potatoes are a favorite Southern comfort food. The goat cheese adds a modern twist to a traditional recipe and gives the potatoes an extra creamy texture.

Depending on what I am serving, I sometimes add crumbled blue cheese to this slaw. If you are making it ahead, add the apples at the last minute to prevent turning.

My mom always served homemade baked beans with hamburgers and home cooked fries. She inherited the recipe from my great-grandmother. I’ve added a variety of beans for color and texture, but it is still the same delicious flavor.

Not exactly southern, but this is one of my favorite side dishes to serve with Mexican fare.
