Pimento Cheese Crostini with Caramelized Onions

This is an elegant way to dress up Pimento Cheese. I love the combination of the sharp cheddar with the sweet onions. Look for Vidalia or Walla Walla onions in your grocery store. They have a much sweet flavor than yellow onions.
