Mayonnaise was my favorite condiment growing up, but somehow I never tried homemade mayonnaise until recently. Unfortunately, it is very easy to make and highly addictive.
FIRST Whisk together egg yolk, lemon juice, vinegar, mustard, and salt in a large mixing bowl. Very slowly, drizzle oil in a steady stream into egg mixture, whisking constantly, until mayonnaise is thick, about 8 minutes. Refrigerate for up to 2 days.
