BOURBON PEACH BREAD PUDDING WITH WHITE CHOCOLATE SAUCE

Ingredients

Pudding
  • 1 ¼ cups 1 percent milk
  • 1 (12-ounce) can evaporated skim milk
  • ¾ cup brown sugar
  • ¼ cup bourbon
  • 1 tablespoon vanilla
  • ¼ teaspoon nutmeg
  • ¼ teaspoon cinnamon
  • 3 eggs, lightly beaten
  • 2 ½ cups peeled, chopped fresh peaches (with juice)
  • 8 cups (1-inch cubes) good-quality white bread (not sandwich bread)
  • 1/3 cup granulated sugar
  • 2 tablespoons butter
  • 1 cup 1 percent milk
  • 1 tablespoon cornstarch
  • 2 tablespoons white chocolate chips
  • 1 teaspoon vanilla

This is one of my favorite ways to use fresh Georgia peaches. Laced with bourbon and drizzled with white chocolate sauce, it’s over-the-top good.

Instructions

FIRST In a large bowl, whisk together milk, evaporated milk, sugar, bourbon, vanilla, spices, and eggs. Add peaches and bread and toss to combine. Cover and chill for 1 hour.

NEXT Preheat oven 350°F. Spoon bread mixture into an 11×8-inch baking dish coated with cooking spray. Bake for 50 minutes until set.

LAST To prepare sauce, melt sugar and butter in a medium saucepan over medium heat. In a separate bowl, whisk together milk and cornstarch. Add milk mixture to saucepan and bring to a boil. Reduce heat, stir in white chocolate and vanilla, and cook until sauce is smooth and thickened, about 2 to 3 minutes. Cut pudding into 9 squares, plate, and drizzle sauce over each serving.
