CHILLED CUCUMBER GAZPACHO

Ingredients

  • 2 English cucumbers, peeled, seeds removed and roughly chopped
  • ¼ cup cold water
  • ¼ cup olive oil
  • 1 medium shallot, chopped
  • 2 tablespoons plain yogurt
  • 2 tablespoons sherry vinegar
  • 1 teaspoon lemon juice
  • ¼ teaspoon salt
  • pinch cayenne pepper

Cool and refreshing soup for summer!

Instructions

FIRST In a blender or food processor combine all ingredients and puree until smooth. Season to taste with salt and fresh cracked pepper.

LAST Ladle soup into bowls, top with fresh shrimp, crab or tomatoes and drizzle with olive oil.
